Garri is consumed by almost every household in Nigeria and some parts of Africa most eespescially west Africa. Gari can be described as a granular food product of cassava roots grated into mash which is immediately fermented for about 3-6 days, dewatered and roasted to give the final product.

Garri is the most popular cassava food in many West African countries. Due to its convenience and multiplicity of use, Gari is gradually gaining a foothold in the international food market. Ghana and Nigeria appear to be the principal producers, consumers, and exporters of gari. The gari market is very competitive, sellers or buyers cannot unilaterally impose prices on the market. In major gari producing areas, Gari is produced by numerous smallholder units which sell gari essentially in village markets. Big markets, which are often fewer, act as an assembly center for gari from the numerous surrounding smallholder units. Such assembly markets are generally well attended by traders from far and wide, especially those markets that are well known for the supply of top quality Garri.
